Description
Vegetable Makhani is a creamy North Indian curry made with mixed vegetables simmered in a buttery tomato-based gravy. Originating from Punjabi cuisine, this dish is known for its mild spice, rich texture, and balance of sweet and savory flavors. It has become a vegetarian favorite in both North and South Indian multi-cuisine restaurants.
The gravy is made with pureed tomatoes, butter, cream, and aromatic spices like cardamom, kasuri methi, and garam masala. Vegetables such as carrots, beans, green peas, cauliflower, and potatoes are blanched and gently cooked in the makhani sauce until tender. The result is a luxurious, mildly spiced curry with a smooth finish.
Vegetable Makhani is typically served with naan, butter roti, or jeera rice, and continues to be a top vegetarian choice at restaurants and wedding menus across Chennai, Hyderabad, and Kochi, as well as among Indian families in Mississauga, Surrey, and Brampton.
